Coleslaw

Serves 8

1 medium head cabbage

2 carrots

1 green onion

1 cup mayonnaise

1 tablespoon sour cream

3 tablespoons sugar

¼ cup vinegar

¼ teaspoon poppy or celery seeds (optional)

Black pepper to taste

Coleslaw is a Dutch dish (kool is Dutch for cabbage) that appeared in North America during colonial days and has remained a favorite ever since.

  • Trim and finely shred cabbage, carrots, and green onion. Place in a bowl.

  • Whisk together mayonnaise, sour cream, sugar, and vinegar.

  • Toss mayonnaise dressing with cabbage mixture, sprinkle with seeds and black pepper. Cover and refrigerate until ready to serve.

Slaw Smarts

Shredded radishes, broccoli stems, firm apples, jicama, and raw turnips can all be used in addition to, or instead of, cabbage to make interesting slaws. And for a low-carb version of the popular salad, replace sugar with your favorite sugar substitute.
