Pear and Spinach Salad

Serves 12

1½ cups vegetable oil

¾ cup apple cider vinegar

3 tablespoons lemon juice

3 tablespoons ginger, minced

1 tablespoon red pepper flakes

1 tablespoon sugar

14 cups baby spinach leaves

2 cups red cabbage, finely shredded

3 cups Asian pears, diced

1 cup dried apricots, chopped

1½ cups cashew nuts

This salad features round, crisp Asian pears and a bracing ginger vinaigrette.

  • Whisk together oil, vinegar, lemon juice, ginger, pepper flakes, and sugar. Set aside until ready to serve salad.

  • In a large salad bowl, combine spinach, cabbage, pears, and apricots. Shake dressing to combine ingredients. Pour over salad and toss until ingredients are lightly coated.

  • Sprinkle cashews over the salad and serve.
