Ingredients

1 ½ pounds 90 percent lean ground beef

1 clove fresh garlic, minced

½ teaspoon all-purpose seasoning

½ cup yellow onions, chopped

½ cup bell peppers, diced

1 cup tomatoes, diced

1 tablespoon tomato paste

½ cup cooking wine

¼ cup green olives, sliced

1 teaspoon oregano

¼ teaspoon black pepper

1 teaspoon cumin

½ cup raisins

1 cup baking potatoes, cubed

½ cup water

When buying ground beef, make sure you choose a package that is at least 90 percent lean. Seventy-five percent lean ground beef still packs 8 grams of saturated fat per 3 ounces — too much!

  • Coat a large skillet with nonstick spray. Add beef, garlic, and all-purpose seasoning to skillet. Cook on medium high for 5 to 8 minutes, using a spatula to stir and chop beef.

  • Add onions, bell peppers, tomatoes, tomato paste, wine, green olives, oregano, black pepper, and cumin to skillet. Cook for 5 minutes.

  • Add raisins, potatoes, and water. Simmer for another 8 to 15 minutes or until potatoes are fork tender.
