1 ½ pounds round sirloin chunks
1 clove fresh garlic, minced
½ teaspoon all-purpose seasoning
½ teaspoon black pepper
1 teaspoon ground ginger
1 teaspoon jalapeño peppers, finely chopped
2 cups yellow onions, sliced
2 cups tomatoes, diced
1 tablespoon curry powder
1 teaspoon coriander
1 cup beef broth
1 cup fat-free sour cream
When cooking beef, make sure you stick with the leaner cuts. Top sirloin, eye of round, and bottom round cuts have less than 3 grams of saturated fats per serving.
Coat a skillet with nonstick spray. Add beef, garlic, and all-purpose seasoning to skillet. Sauté on medium high for 8 minutes, stirring often.
Mix remaining ingredients except sour cream and add to skillet. Simmer for 8 to 10 minutes. Add sour cream and mix well. Simmer for another 5 minutes.
Curry powder is not a standard flavor like ginger. There are many varieties, but the most common spices used to create it are coriander, cumin, turmeric, and fenugreek. Ginger, nutmeg, black pepper, and garlic are also commonly used.
