Salmon Quesadilla

⅓ cup fat-free cream cheese
¼ cup white onions, finely chopped
¼ teaspoon fresh garlic, minced
12 ounces smoked salmon, chopped
⅛ teaspoon ground pepper
4 8-inch whole wheat tortillas
Salmon is easily found in most grocery stores in vacuum-packed pouches and cans. Salmon is a great source of calcium and omega-3 and omega-6 fatty acids.
Mix all ingredients except tortillas. Spread salmon mixture over half of each tortilla.
Fold tortilla over and cook in nonstick skillet over medium heat for 2 minutes on each side. Cut each quesadilla into three wedges and serve.
