Smoked fish is a delicacy you can make at home. Using a commercial smoker or homemade one, fish can be smoked and eaten immediately or smoked long enough to preserve them. Many kinds of marinades are used for flavoring the fish, and different kinds of wood are burned to produce various smoky flavors. Fish can be smoked whole or cut into fillets or steaks for smoking. Carp are very good smoked, and you can get the small bones out of carp more easily after smoking. All kinds of fish can be smoked but oily fish seem to do better. If you don't want to make your own, you can buy smoked salmon in many stores. Use smoked fish in dips or eat it as a main course.
