Homemade Berry Jam

This jam can easily be made with peaches, apricots, cherries, or plums. Try adding a cinnamon stick, vanilla bean, or bay leaf for an interesting added layer of flavor.

INGREDIENTS

  • 4 cups raspberries or blackberries
  • ¼ cup honey, and more as needed
  • Juice and zest of ½ lemon
  • Pinch kosher salt
  1. In a large sauté pan, combine berries, honey, lemon juice and zest, and salt.

  2. Place over high heat, and stir, mashing berries, until the juice begins to run.

  3. Reduce heat, and continue to cook, stirring occasionally, until the berries are swimming in juice.

  4. Continue to cook and stir until the liquid is evaporated and the jam is thick.

  5. Taste and adjust seasoning with honey or lemon juice as needed. Cool completely and refrigerate.
