Chocolate Cake

This is a lovely, moist cake that is great on its own, but even better smothered with fresh berries.

INGREDIENTS

  • 1 ⅔ cups unbleached white flour
  • ¾ cup date sugar
  • ¼ cup cocoa powder
  • 1 teaspoon baking soda
  • ½ teaspoon kosher salt
  • 1 cup water
  • ½ cup canola oil
  • 1 teaspoon cider vinegar
  • 1 teaspoon vanilla
  1. Preheat oven to 350°F.

  2. Coat a 9" × 13" rectangular pan with pan spray.

  3. In a large bowl, stir together flour, date sugar, cocoa, baking soda, and salt.

  4. In a separate bowl combine water, oil, vinegar, and vanilla.

  5. Slowly stir the oil mixture into the flour mixture.

  6. Pour into prepared pan and bake for 20–25 minutes, until a toothpick inserted at the center of the cake comes out clean. Cool completely.
