Iced Hibiscus

The dried hibiscus flower turns this infusion a brilliant red. Its flavor is slightly tangy, and oh-so-refreshing.

INGREDIENTS

  • ¼ cup dried hibiscus flower (also called Jamaican sorrel)
  • 1 cinnamon stick
  • 2 or 3 star anise
  • 2 tablespoons honey
  • Juice of 1 lime
  • 2 quarts water
  1. In a large saucepan, combine hibiscus, cinnamon stick, star anise, honey, lime, and 2 cups water.

  2. Bring to a boil, remove from heat, and steep 15 minutes.

  3. Strain into a large pitcher, add remaining water, and chill.

  4. Serve over ice.
