Turkey Burgers
The turkey burger is a true American original. With less fat than ground beef, it is significantly healthier than a burger made from beef, cutting about 200 calories, and 7 grams of fat.
INGREDIENTS
- 2 pounds ground turkey
- ½ teaspoon kosher salt>
- ½ teaspoon black pepper
- 6 large hamburger buns, toasted
Divide hamburger into six equal portions. Work the meat in your hand, patting out the air and compacting the meat. Form portions into ½-inch thick discs and make a hole in the very center of each with your finger.
Preheat the grill on high heat. Place burgers over direct heat and cook 2–3 minutes with the lid closed.
Open the lid, flip burgers, and cook another 2–3 minutes. If the burgers do not come off the grill easily for the first flip, close the lid and cook another minute.
Season with salt and pepper, then serve on a bun.
Let your guests doctor them up with sliced tomatoes, onions, lettuce, pickles, Thousand Island dressing, ketchup, mustard, and mayonnaise.

Kitchen Tricks
Why put a hole in the center of each patty? This trick keeps the patty from puffing up into a ball on the grill. Another trick for juicy burgers is to resist pressing the burger onto the grill with your spatula, which dries the burger out. With so much less fat than beef, you need all the moisture you can get.
