Waldorf Salad
This salad was created in the 1890s at the Waldorf Astoria Hotel in New York City. The original version used only apples, celery, and mayonnaise. Nuts and grapes appeared in recipes starting in the 1920s. We have lightened it up here with the help of light sour cream. Nonfat yogurt is another option, with slightly more tang.
INGREDIENTS
- 2 red apples, diced skin-on
- 4 stalks celery, diced
- 1 cup walnuts, toasted and chopped
- 1 cup green or red grapes, halved
- 1 cup light sour cream
In a large bowl combine the apples, celery, walnuts, and grapes.
Toss with sour cream to coat and serve chilled.

Which Apple?
You can use any apple you like in this recipe. It should be one that you enjoy eating out of hand. The Fuji is a personal favorite. This salad is also quite good when made with pears.
