Blueberry Bread
Try this with a good cup of coffee on Christmas morning. You'll get a great start on the big day and you'll probably be back for seconds.
INGREDIENTS
- 1 cup fresh (or thawed frozen) blueberries
- 1½ cups all-purpose flour
- 1 tablespoon flour
- ½ cup granulated sugar
- 2/3 cup milk
- 1 egg
- 1 heaping teaspoon baking powder
Preheat oven to 375°F. Grease and flour a 9" × 5" loaf pan.
Sift the dry ingredients together (leaving aside 1 tablespoon flour).
In a separate bowl, stir together the egg and milk.
Make a well in the center of the dry ingredients. Add milk mixture to the well all at once, tossing with a fork until just moistened.
Toss blueberries in 1 tablespoon flour. Add blueberries to batter.
Spoon batter into prepared pan.
Bake until a toothpick inserted into the center comes out clean, approximately 30 minutes.
Transfer to wire rack; let cool.
