Achara

1 habanero chili pepper

1 green papaya

½ large carrot

2-inch piece daikon radish

3 tablespoons granulated sugar

⅓ cup cider or Asian rice vinegar

1 teaspoon salt

Serves 3–4 (as a sauce)

Inspired by a classic Filippino dish, this sweet and tangy treat tastes great served over rice or noodles.

  • Deseed the red chili pepper. Peel the papaya and the carrot. Thinly slice the papaya, carrot, daikon radish, and the chili pepper lengthwise to resemble matchsticks.

  • Whisk together the sugar, rice vinegar, and salt. Add to the papaya mixture and refrigerate, covered, for 1 hour to give the flavors a chance to blend. Use within a few days.
