1 habanero chili pepper
1 green papaya
½ large carrot
2-inch piece daikon radish
3 tablespoons granulated sugar
⅓ cup cider or Asian rice vinegar
1 teaspoon salt
Serves 3–4 (as a sauce)
Inspired by a classic Filippino dish, this sweet and tangy treat tastes great served over rice or noodles.
Deseed the red chili pepper. Peel the papaya and the carrot. Thinly slice the papaya, carrot, daikon radish, and the chili pepper lengthwise to resemble matchsticks.
Whisk together the sugar, rice vinegar, and salt. Add to the papaya mixture and refrigerate, covered, for 1 hour to give the flavors a chance to blend. Use within a few days.
