Quesadillas
Quesadillas are a perfect family meal because the heat of the spices can be adjusted to the preferences of each person.
1. Sauté peppers and onion in nonstick skillet until tender, about 3 to 5 minutes. Remove from skillet.
2. In same skillet, heat tortilla until warm.
3.O nto each tortilla, spoon ¼ of pepper and onion mixture, cheese, and chicken.
4. Fold tortilla in half and cook in a nonstick skillet for 5 minutes, turning once.
5. Serve with sour cream and salsa.

1 red pepper, sliced
1 cup sliced green peppers and onions (as tolerated)
4 whole-wheat or corn tortillas
1 cup nonfat cheese
2 cups rotisserie chicken, shredded
1 cup salsa (as tolerated)
1 cup nonfat sour cream
