Quesadillas are a perfect family meal because the heat of the spices can be adjusted to the preferences of each person.
INGREDIENTS | SERVES 4
- 1 red pepper, sliced
- 1 cup sliced green peppers and onions (as tolerated)
- 4 whole-wheat or corn tortillas
- 1 cup nonfat cheese
- 2 cups rotisserie chicken, shredded
- 1 cup salsa (as tolerated)
- 1 cup nonfat sour cream
Sauté peppers and onion in nonstick skillet until tender, about 3 to 5 minutes. Remove from skillet.
In same skillet, heat tortilla until warm.
Onto each tortilla, spoon ¼ of pepper and onion mixture, cheese, and chicken.
Fold tortilla in half and cook in a nonstick skillet for 5 minutes, turning once.
Serve with sour cream and salsa.
