Tofu and Chinese Cabbage Soup (Gluten-Free and Lactose-Free)

If you dislike cabbage because of its strong flavor, try it in soup instead. The flavor is much more mellow, but still has crunch.

1. Sauté cabbage and green onions in sesame oil.

2. Add other ingredients, except the snow peas and tofu.

3. Bring to a boil, then simmer on low heat for 10 minutes.

4. Add in snow peas and tofu. Heat for additional 30 minutes or until tofu is heated through.

Serves 4

Ingredients

2 cups firmly packed Chinese cabbage, chopped

¾ cup thinly sliced green onion

1 tablespoon light sesame oil

1 (6-ounce) can sliced water chestnuts, undrained

1 (32-ounce) carton low-sodium vegetable or fat-free gluten-free chicken broth

2 tablespoons dry sherry or wine

2 teaspoons reduced-sodium soy sauce

1 cup snow peas, trimmed and halved

8 ounces soft or firm tofu, cut into ½" cubes
