Fruity Oatmeal Bars
With five grams of fiber per square, these tasty treats sneak some extra fiber into your family’s afternoon snack.
INGREDIENTS | SERVES 18
- 3 cups quick-cooking oats
- 1 teaspoon cinnamon
- 1/3 cup ground flaxseed or wheat germ
- ¼ teaspoon nutmeg
- ¾ cup dates or prunes, chopped
- ¾ cup dried apricots, chopped
- 1 cup apple butter
- 1 tablespoon brown sugar
Preheat oven to 350°F.
Mix the oats, cinnamon, flaxseed or wheat germ, and nutmeg in a large bowl. Add dates and apricots, then apple butter. Ingredients should appear moist and well blended.
Spoon into a 8" × 13" nonstick or lightly greased pan. Flatten with spatula to make an even bottom layer.
Sprinkle brown sugar over surface.
Bake for 20 minutes. Remove from oven and cut into 2" squares, then let cool for 20 minutes. Remove from pan when cool.
