Poached Pears and Raspberries

You can substitute other fruit, such as apples, peaches, apricots, or plums, in this recipe.

INGREDIENTS | SERVES 4

  • 1 cup white grape juice
  • ¼ cup apple juice
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 4 whole pears
  • ½ cup fresh raspberries
  • 2 tablespoons orange zest
  • Sweetener to taste
  1. Combine the juices in a bowl, then slowly stir in the cinnamon and nutmeg.

  2. Peel the pears, leaving the stems and removing the core from the bottom of the pear.

  3. Using a shallow pan, stand pears in pan. Slowly add the juice mixture to the pears and turn burner to medium heat.

  4. Without boiling, simmer pears for 30 minutes, turning the pears frequently.

  5. When pears are soft, place them on individual dessert plates.

  6. Spoon juice over pears, then garnish with raspberries. You may add orange zest or you may purée the berries in a blender and pour over pears. Sprinkle with sweetener if desired.
