Apple Snack Cake
Wheat germ is high in vitamin E, protein, fiber, polyunsaturated fat, vitamins, and minerals. Get in the habit of adding it to baked goods, cereal, and oatmeal.
INGREDIENTS | SERVES 16
- 1¼ cups boiling water
- 1 cup quick-cooking oatmeal, uncooked
- 1¾ cups all-purpose flour
- ¾ cup granulated sugar
- ¾ cup firmly packed brown sugar
- ½ cup wheat germ, any flavor
- 2 teaspoons baking soda
- ½ teaspoon ground nutmeg
- 1 teaspoon ground cinnamon
- ½ teaspoon salt
- ½ cup chopped nuts (optional)
- 2 cups peeled, chopped apples
- 1/3 cup no-sugar-added applesauce
- 1 ripe banana, mashed
- 1 egg plus 2 egg whites
- 1 teaspoon vanilla
Preheat oven to 350°F. Coat a 13" × 9" baking pan with nonfat cooking spray.
Combine water and oats in bowl and set aside.
In separate bowl, mix together flour, sugars, wheat germ, baking soda, cinnamon, nutmeg, and salt. Add nuts.
In oat mixture, add apples, applesauce, banana, egg, egg whites, and vanilla. Mix well.
Add dry ingredients to wet ingredients, mixing only until moistened. Do not overmix, or the cake will become dry.
Pour into pan.
Bake 40 to 45 minutes, or until a toothpick or wooden skewer inserted into the center of the cake comes out clean. Cool on wire rack.
As an optional step, sprinkle with confectioner’s sugar.
