Savory Cabbage Soup
Eat cruciferous vegetables. Cabbage, broccoli, Brussels sprouts, and cauliflower have anti-carcinogens, but be wary if they give you indigestion.
- 1 head cabbage
- 6 green onions
- 2 green peppers
- 1 can diced tomatoes
- 1 bunch celery
- 2 carrots
- 3 cups cooked cannellini beans
- 2 cans low-sodium vegetable broth
- ½ to 1 teaspoon dried dill weed
- 1 soup can of water
- Salt and pepper to taste
Cut the vegetables into bite-sized pieces and shred cabbage.
Sauté the cabbage, onions, green peppers, tomatoes, celery, and carrots 3 to 5 minutes in a nonstick frying pan.
Add vegetables and other ingredients in a medium stockpot. Add water to just cover the mixture.
Bring to a boil, then lower heat to simmer until vegetables are soft. Add salt and pepper to taste.
