Savory Cabbage Soup

Eat cruciferous vegetables. Cabbage, broccoli, Brussels sprouts, and cauliflower have anti-carcinogens, but be wary if they give you indigestion.

SERVES 4

INGREDIENTS

  • 1 head cabbage
  • 6 green onions
  • 2 green peppers
  • 1 can diced tomatoes
  • 1 bunch celery
  • 2 carrots
  • 3 cups cooked cannellini beans
  • 2 cans low-sodium vegetable broth
  • ½ to 1 teaspoon dried dill weed
  • 1 soup can of water
  • Salt and pepper to taste
  1. Cut the vegetables into bite-sized pieces and shred cabbage.

  2. Sauté the cabbage, onions, green peppers, tomatoes, celery, and carrots 3 to 5 minutes in a nonstick frying pan.

  3. Add vegetables and other ingredients in a medium stockpot. Add water to just cover the mixture.

  4. Bring to a boil, then lower heat to simmer until vegetables are soft. Add salt and pepper to taste.
