Orange Nut Salad
A Harvard University study showed that women who took in 400 micrograms of folate (the food form of folic acid) each day cut their risk of colon cancer by 40 percent. Folate can be found in beans, leafy greens, and orange juice.
SERVES 4
INGREDIENTS
Dressing:
- 3 tablespoons orange juice
- 1 tablespoon lemon juice
- 1 tablespoon honey
- 2 teaspoons Dijon-style mustard
- 2 teaspoons orange rind, grated
- ½ teaspoon salt
- 2/3 cup vegetable oil
- 1 head romaine lettuce
- 3 tablespoons red onion, chopped
- 1 cup mandarin oranges
- 1 tablespoon fresh parsley, minced
- ½ cup pecans
Combine orange juice, lemon juice, honey, mustard, orange rind, and salt in small bowl.
Whisk in oil until well blended. Refrigerate until ready to use.
Wash and dry the romaine lettuce on paper towels or in a salad spinner. Tear into bite size pieces and place in a large salad bowl.
Combine the remainder of the salad ingredients.
Pour dressing over salad immediately before serving.
