No-Bake Chocolate-Peanut Butter Oatmeal Cookies


  • 2 tablespoons butter
  • ¼ cup cocoa
  • ½ cup granulated sugar
  • ¼ cup Mock Cream
  • Dash of sea salt
  • 1 teaspoon vanilla
  • 1 tablespoon peanut butter
  • 1½ cups oatmeal
  1. Add butter to deep, microwave-safe bowl; microwave on high for 20–30 seconds, or until butter is melted.

  2. Add cocoa; stir to blend.

  3. Stir in sugar, Mock Cream, and salt; microwave on high for 1 minute, 10 seconds to bring to full boil. (Should you need to microwave batter more, do so in 10-second increments. You want a full boil, but because it will continue to cook for a while once it's removed from microwave, heating too long can cause mixture to scorch.)

  4. Add vanilla and peanut butter; stir until mixed. Fold in oatmeal.

  5. Drop by tablespoonful on waxed paper and allow to cool.
