Chicken and Broccoli Casserole

INGREDIENTS | SERVES 4

  • 2 cups broccoli
  • ½ pound (8 ounces) cooked chopped chicken
  • ½ cup skim milk
  • ⅛ cup (2 tablespoons) real mayonnaise
  • ¼ teaspoon curry powder
  • 1 recipe Condensed Cream of Chicken Soup
  • 1 tablespoon lemon juice
  • ½ cup (2 ounces) grated Cheddar cheese
  • ½ cup bread crumbs
  • 1 teaspoon melted butter
  • 1 teaspoon olive oil
  1. Preheat oven to 350°F. Treat 11″ × 7″ casserole dish with nonstick spray.

  2. Steam broccoli until tender; drain.

  3. Spread out chicken on bottom of dish; cover with steamed broccoli.

  4. In medium bowl, combine milk, mayonnaise, curry powder, soup, and lemon juice; pour over broccoli.

  5. In small bowl, mix together cheese, bread crumbs, butter, and oil; sprinkle over top of casserole. Bake 30 minutes.
