Chicken and Broccoli Casserole
INGREDIENTS | SERVES 4
- 2 cups broccoli
- ½ pound (8 ounces) cooked chopped chicken
- ½ cup skim milk
- ⅛ cup (2 tablespoons) real mayonnaise
- ¼ teaspoon curry powder
- 1 recipe Condensed Cream of Chicken Soup
- 1 tablespoon lemon juice
- ½ cup (2 ounces) grated Cheddar cheese
- ½ cup bread crumbs
- 1 teaspoon melted butter
- 1 teaspoon olive oil
Preheat oven to 350°F. Treat 11″ × 7″ casserole dish with nonstick spray.
Steam broccoli until tender; drain.
Spread out chicken on bottom of dish; cover with steamed broccoli.
In medium bowl, combine milk, mayonnaise, curry powder, soup, and lemon juice; pour over broccoli.
In small bowl, mix together cheese, bread crumbs, butter, and oil; sprinkle over top of casserole. Bake 30 minutes.
