Pasta with Tuna Alfredo Sauce

INGREDIENTS | SERVES 4

  • 1 cup nonfat cottage cheese
  • 1 tablespoon skim milk
  • 2 teaspoons olive oil
  • 1 clove garlic, minced
  • 2 (6-ounce) cans tuna packed in water, drained
  • ⅛ cup (2 tablespoons) dry white wine
  • ¼ cup freshly grated Parmesan cheese
  • 2 cups cooked pasta
  • Freshly ground black pepper, to taste (optional)
  1. Process cottage cheese and skim milk in food processor or blender until smooth. Set aside.

  2. Heat olive oil in large nonstick skillet. Add garlic; sauté 1 minute. Stir in tuna; sauté another minute.

  3. Add wine to skillet; bring to a boil. Lower heat; add cottage cheese mixture. Cook for about 5 minutes, being careful not to let it boil.

  4. Stir in Parmesan; continue to heat 1 minute, stirring constantly.

  5. Add pasta; toss with sauce.

  6. Divide into 4 equal servings; serve immediately, topped with freshly ground pepper, if desired.
