Whipped Mocha Mousse

INGREDIENTS

  • ¼ cup cold water
  • 1 envelope Knox Unflavoured Gelatine
  • ¾ cup hot water
  • 2 teaspoons instant espresso powder
  • ½ cup sugar
  • ¼ cup unsweetened cocoa
  • 1½ teaspoons vanilla extract
  • 1 recipe Nonfat Whipped Milk Base
  • Ground cinnamon (optional)
  1. Pour cold water into blender and sprinkle gelatine over it; let stand for 1 minute.

  2. Add hot water and instant espresso powder; blend at low speed until gelatine is completely dissolved.

  3. Add sugar, cocoa, vanilla, and cinnamon if using; process at high speed until blended.

  4. Allow mixture to cool to at least room temperature before folding into Whipped Milk Base. Chill until ready to serve.
