Strawberry-Banana Sherbet

INGREDIENTS

  • 1⅓ cups strawberry halves
  • 2 tablespoons sugar
  • 1 ripe (but not overly ripe) banana, mashed
  • 1 tablespoon frozen orange juice concentrate
  • 2 tablespoons water
  • 1 tablespoon lemon juice
  • 1 cup 1% milk
  • 2 tablespoons nonfat milk powder
  1. Sprinkle sugar over strawberries. Mash strawberries with fork; allow 5 minutes or so for sugar to dissolve and draw juice out of strawberries.

  2. Combine all ingredients in blender or food processor; process to desired consistency. (Some people prefer chunks of fruit; others like a smoother sherbet.)

  3. Pour mixture into ice-cream maker; freeze according to manufacturer's directions, or pour into ice cube trays or covered container and freeze overnight.
