Chicken Quesadillas with Salsa
This recipe is easy enough that you will be able to make it for yourself and your family. Try it with different kinds of cheeses and even add some vegetables if you like.

INGREDIENTS | MAKES 2 quesadillas
- 4 tortillas
- ½ cup chopped, cooked chicken (leftover chicken works great)
- ¼ cup Cheddar cheese
- 2 tablespoons salsa
Place 1 tortilla on a microwave-safe dinner plate.
Top with half of the cooked chicken and half of the cheese. Place another tortilla on top.
Heat quesadilla in microwave for 15–20 seconds, or until the cheese melts. Cool slightly, then cut into wedges to serve.
Repeat with remaining ingredients.
