Chocolaty Chip Pancakes

Try these as a special treat after a sleepover. They are easy to make, and so much fun to eat!

DIFFICULTY: MEDIUM

INGREDIENTS | MAKES 16 pancakes

  • 1 cup flour
  • 1 tablespoon sugar
  • 1 teaspoon baking powder
  • ½ cup chocolate chips
  • 1 cup milk
  • 1 egg, lightly beaten
  • 2 tablespoons oil
  • Syrup
  • Confectioners' (powdered) sugar, optional
  1. In a large bowl, combine the flour, sugar, baking powder, and chocolate chips.

  2. In a small bowl, combine the milk and the beaten egg.

  3. Pour the milk mixture into the flour mixture and mix together with a whisk until smooth.

  4. In a large skillet, heat half of the oil. Drop about 2 table-spoonfuls of pancake batter onto the hot skillet.

  5. Cook until the edges become brown and the batter becomes bubbly.

  6. Flip pancakes over and cook until the other side is browned, too. Continue cooking the rest of the pancakes until all the batter is used up. (Add more oil to the pan as you need to.)

  7. Serve pancakes with your favorite syrup or sprinkled with confectioners' sugar.
