Fruity Rice

The apples and cranberries in this rice make it a nice autumn dish to go with a savory main dish like ham or Crispy, Crunchy Chicken Legs (Page 65).

DIFFICULTY: HARD

Makes 4 servings

1 cup cooked rice

2 red apples

1 tablespoon oil

¼ cup raisins

¼ cup dried cranberries

  • Cook the rice according to package directions. Set aside.

  • Chop the apple into small pieces, leaving the skin on.

  • Heat the oil in a small skillet.

  • Add the apples and cook for about 5 minutes.

  • Stir in the raisins, dried cranberries, and rice.

  • Continue cooking and stirring until the rice mixture is heated throughout.

Cranberries, a traditional Thanksgiving food, were part of the Pilgrims' feast at the first Thanksgiving in 1621.
