Chinese Fried Rice
DIFFICULTY: HARD
Makes 4–6 servings
2 cups cooked white rice
¼ cup oil
1 small onion, chopped
2 cloves garlic, chopped
¼ teaspoon ground ginger
½ cup chopped carrots
1 zucchini, sliced
½ cup frozen peas
2 eggs, beaten
¼ cup soy sauce
Cook the rice according to package directions. Set aside.
Heat oil in a large skillet.
Add the onion, garlic, ginger, carrots, zucchini, and peas.
Cook until the vegetables are tender, about 5 minutes.
Remove the skillet from the heat and put the vegetable mixture into a large bowl.
Add the beaten eggs to the skillet. Cook the eggs until they are scrambled.
Combine the egg mixture and the mixed vegetables.
Put the cooked rice into the skillet and stir.
Add the soy sauce to the rice, then add the vegetable and egg mixture back into the skillet.
Stir with the spatula until everything is heated through.
To see if the vegetables are cooked, stab one with a fork. If the fork goes in easily, your vegetables are done.
