Ultimate Peanut Butter-Chocolate Squares
DIFFICULTY: MEDIUM
Makes about 3–4 dozen squares
¾ cup graham cracker crumbs
1 cup smooth peanut butter
1 cup (2 sticks) butter or margarine, melted
3½ cups confectioners' (powdered) sugar
1½ cups chocolate chips
Spray a 9″ × 13″ pan with cooking spray. Set aside.
In a large bowl, combine the graham cracker crumbs, peanut butter, melted butter, and confectioners' sugar. Mix well.
Spread batter out into prepared pan.
In a medium saucepan, heat 1 quart of water.
Put chocolate chips into a smaller saucepan and set this pan inside the saucepan of water to create your own double boiler. You can also use a specially designed double boiler if you have one.
Continue stirring chocolate chips until they are completely melted.
When the chocolate chips are melted, use a spatula to spread the chocolate over the peanut butter mixture.
Place pan in the refrigerator to cool before cutting into squares.
When the water boils, the chocolate in the smaller saucepan melts. This process allows the chocolate chips to melt slowly without being directly on top of the burner.
