Fruit and Cookie Pizza
DIFFICULTY: HARD
Makes 6–8 servings
1 16.5-ounce package refrigerated cookie dough
1 8-ounce package cream cheese, softened
¼ cup sugar
1 teaspoon vanilla extract
1 cup fresh fruit, cut up into slices/chunks (bananas, peaches, strawberries, blueberries, kiwi)
¼ cup fruit preserves, any flavor
2 teaspoons water
Preheat the oven to 350°F.
Spread entire roll of cookie dough out onto a large, ungreased pizza pan or cookie sheet. Bake 12–14 minutes, or until lightly browned. Remove from oven. Cool completely.
In a large bowl, combine softened cream cheese, sugar, and vanilla. Spread mixture over top of cooled dough.
Place fruit on top of cream cheese.
In small bowl, combine preserves and water. Heat in microwave for 30 seconds, until the glaze becomes liquidy and spreadable. Brush glaze over fruit on pizza.
Refrigerate your fruit pizza until you are ready to serve.
