Hot-and-Spicy Pork Meatball Sub

To cut back on calories in this recipe, you can make this serve 6 people instead of 4. Make 18 smaller meatballs instead of 16 larger ones and serve them on 6 rolls.

MAKES 4 BIG SANDWICHES

INGREDIENTS

  • 1 pound ground pork
  • Salt and pepper to taste
  • ¼ teaspoon ground cloves
  • 1 tablespoon Tabasco sauce
  • 2 tablespoons chili sauce
  • 1 egg, well beaten
  • ½ cup fine bread crumbs
  • ½″ canola oil (about ¼ cup) in a heavy frying pan
  • 4 hero rolls (whole wheat if possible)
  • 4 teaspoons of your favorite barbecue sauce
  • ½ sweet onion, sliced thinly
  1. Mix the pork, salt, pepper, cloves, Tabasco sauce, chili sauce, and egg in a bowl.

  2. Form 16 small meatballs; roll them in the bread crumbs. Heat the oil to 350ºF; fry meatballs until brown and crisp all over.

  3. Drain the meatballs on paper towels.

  4. Place on rolls, drizzle with barbecue sauce, and pile with onions.

When the Bread Becomes the Serving Dish

Serve this meal with a fork and encourage your child to eat the meatballs out of the sub roll. They may just be full before they eat the bread. Remember, in this case, to hold off on the full bolusing until after the meal.
