Crunchy Sautéed New Potatoes

Kids love this recipe! It's quick to make and very tasty. The potatoes get quite crisp as the water evaporates and cooks them through. Add fresh parsley just before serving for extra color and kick.

YIELD 4 SERVINGS; SERVING SIZE 2 HALF-POTATOES

INGREDIENTS

  • 1 tablespoon olive oil
  • 2 tablespoons water
  • 8 medium-sized new potatoes, scrubbed and halved
  • Salt and pepper to taste
  1. Add the oil and water to a nonstick pan over medium heat.

  2. Place the potatoes in the pan, cut-sides down. Cover and cook for 10 minutes.

  3. Remove the lid and continue to brown until the cut sides are crisp. Turn; sprinkle with salt and pepper.
