Crispy Sesame Chicken Tenders

This gives you loads of flavor for very few calories. If you and your family are addressing problems of weight, serve this as a snack. High protein, very low fat, and no sugar!

YIELDS 6 SERVINGS; SERVING SIZE 3 PIECES

INGREDIENTS

  • 6 chicken tenders (totaling 1 pound)
  • ¼cup soy sauce
  • Juice of ½ lime
  • 1 teaspoon Splenda
  • ¼teaspoon cayenne pepper
  • ½cup white sesame seeds
  1. Cut the tenders in bite-sized pieces.

    Mix the next four ingredients in a resealable plastic bag. Add the tenders and shake to coat the chicken. Let marinate for 20–30 minutes.

  2. Preheat the broiler to 350°F. Prepare a cookie sheet with nonstick spray or coat it with aluminum foil.

  3. Sprinkle the sesame seeds on a piece of waxed paper. Drain the tenders. Press the chicken pieces into the seeds on wax paper. Discard the marinade.

  4. Broil, turning occasionally, for 10 minutes. Reduce heat to 225°F; bake for another 5 minutes. Serve hot.
