Baked Sweet Potato Sticks

These fries are good for you and make a delicious and energizing side dish that substitutes for traditional French fries. Great for kids!

1 LARGE POTATO SERVES 2

INGREDIENTS

  • 1 large sweet potato, peeled, cut into matchsticks
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • 1 teaspoon thyme leaves, dried
  • 1 teaspoon sage leaves, dried
  1. Blanch the peeled potato slices in boiling water 4–5 minutes. Dry on paper towels.

  2. Sprinkle with olive oil, salt, pepper, and herbs. Bake in an aluminum pan at 350ºF until crisp, about 10 minutes.
