Sweet Potato Crisps
There's a risk that these sweet potato strips will caramelize and burn, so check them often while cooking.
- 1 small sweet potato or yam
- 1 teaspoon olive oil
- Sea salt and freshly ground black pepper to taste (optional)
Preheat oven to 400°F.
Scrub the sweet potato and pierce the flesh several times with a fork. Place on a microwave-safe plate; microwave for 5 minutes on high.
Remove from the microwave and wrap the sweet potato in aluminum foil. Set aside for 5 minutes.
Remove the foil, peel the potato, and cut it into French fries.
Spread the fries on a baking sheet treated with nonstick spray; spritz with the olive oil. Bake 10–15 minutes, or until crisp. Check them often while cooking to ensure burning doesn't occur, lowering the oven temperature if necessary. Season with salt and pepper, if desired.
