Best Cookie Bars

These delicious bars are rich and decadent and take about 5 minutes to put together. They're perfect for packing into lunchboxes or filling a cookie jar.

YIELDS 36 BARS

INGREDIENTS

  • Unsalted butter (for greasing)
  • 1 cup coconut
  • 1 cup gluten-free white chocolate chips
  • 1 cup special dark, gluten-free chocolate chips
  • 1 cup chopped salted cashews
  • 1 cup chopped pecans
  • 1 (14-ounce) can gluten-free sweetened condensed milk
  • 3 tablespoons gluten-free cocoa powder
  • 1 teaspoon gluten-free vanilla flavoring
  1. Preheat oven to 325ºF. Line a 13″ × 9″ baking pan with parchment paper; lightly grease with unsalted butter.

  2. Layer coconut, white chocolate chips, dark chocolate chips, cashews, and pecans in pan in that order.

  3. In small bowl, combine condensed milk, cocoa powder, and vanilla; mix with wire whisk until blended. Drizzle this mixture evenly over ingredients in pan.

  4. Bake 22–26 minutes, or until the bars are set and are bubbly all over the surface.

  5. Cool completely in pan. Then remove the bars along with the parchment paper from pan, peel off paper, and cut into bars. Store tightly covered at room temperature.
