Country Ham

A country ham is a beautiful thing! Depending on where they come from, country hams are smoked or salt cured. Both are improved by soaking.

SERVES 20

INGREDIENTS

  • 10-pound country ham, bone in Water to cover
  • 10 bay leaves
  • 1 pound brown sugar
  • 20 whole cloves, bruised
  • 25 peppercorns, bruised
  • 10 coriander seeds, bruised
  • ½ cup brown sugar
  • 2 tablespoons dark mustard
  • ½ teaspoon powdered cloves
  • 1½ cups apple cider
  1. Prepare the ham by removing skin and most of the fat, leaving ¼″ of fat.

  2. Soak ham in water to cover with bay leaves, 1 pound brown sugar, cloves, peppercorns, and coriander seeds for 30 hours in your fridge.

  3. Preheat the oven to 300ºF. Pat the ham dry and place in a roasting pan. Mix together ½ cup brown sugar, the mustard, and the cloves.

  4. Bake for 3½ hours, basting with the apple cider. You can degrease the pan juices and use the apple cider as a sauce; otherwise, serve with applesauce.

Bruising

To bruise garlic or any food, you should place the flat side of a knife against the clove and quickly whack the knife once with your hand to soften but not break the clove.
