Christmas Morning Eggs
Making this casserole the day before, doing all but the final baking, makes it settle well. On Christmas morning, you pop it in the oven and let it bake while opening gifts. In a snap, you've got an effortless holiday breakfast.
- 7 slices low-carb wheat bread, torn into pieces
- 1 pound ground breakfast sausage or 1 pound bacon
- 12 eggs, beaten
- 16 ounces low-fat shredded Cheddar cheese, divided
- ¼ cup low-fat cream
- Dash paprika, salt, and pepper
Preheat oven to 350°F.
Line bottom of 9″ × 13″ lightly greased baking dish with torn bread pieces.
Brown sausage or cook bacon and crumble into small pieces. Set aside.
Beat together eggs, ½ of cheese, and cream; pour over bread in baking dish. Top with sausage or bacon.
Sprinkle top with remaining cheese, paprika, salt, and pepper. If holding overnight, cover and refrigerate at this point.
Bake at 350°F for 20 minutes, or until golden brown and bubbly.
