These tasty “crepes” will surprise you and your child and quickly become a favorite.
- Cooking spray or margarine for coating
- 2 eggs
- ¼ cup raw chopped onion and peppers
- ¼ cup crumbled cooked bacon
Grease a microwave-safe dinner plate with margarine or spray with cooking spray
Scramble 2 eggs in a bowl, whipping well, then pour onto the plate.
Place plate in microwave and cook on high until egg is cooked solid.
Sauté peppers and onions if desired. Can be served raw as well.
Top with bacon, onion, peppers, or other toppings and roll up to become a “crepe.”
