Peach Parfait

Parfait means “perfect” in French. Letting kids build their own perfect dessert makes them feel like it's really something special. This recipe lends itself well to that process.

YIELDS 4 SERVINGS; SERVING SIZE ½ CUP

INGREDIENTS

  • 4 cups water
  • 4 ripe peaches
  • 4 teaspoons lemon juice
  • ½ cup whipping cream
  • 1 teaspoon Splenda
  • ¼ cup Fresh Fruit Sauce (use raspberries)
  • 2 teaspoons slivered almonds, toasted
  1. Bring 4 cups of water to a boil in a two-quart saucepan over medium heat. Add the peaches; cook for 3–4 minutes, or until skin begins to look dull and puffed. Drain the water. Slip the skins off, then slice the peaches into a bowl.

  2. Sprinkle the peaches with lemon juice. Whip the cream with the Splenda; set aside.

  3. Divide the peaches among four wine glasses. Add a teaspoon of fresh raspberry sauce to each glass. Repeat with a second layer of each.

  4. Top each parfait with whipped cream and sprinkle the top with almonds. Serve chilled.
