- 1 bell pepper, chopped
- ½ onion, chopped
- 6 button mushrooms, chopped
- 1 clove garlic, minced
- 3 tablespoons olive oil
- 3 medium white potatoes, cooked and diced
- 1 tomato, chopped
- ¼ cup grated gluten- and casein-free Cheddar cheese (optional)
Sauté pepper, onion, mushrooms, and garlic in olive oil until vegetables are tender.
Add potatoes and cook until potatoes are browned.
Add tomato and cook until mixture is heated through.
Top with cheese, if using.
