Black Bean Cakes

You can substitute cornmeal for gluten-free breadcrumbs in this recipe.

INGREDIENTS

  • 2 cups cooked black beans (or 1 [15-ounce] can)
  • 3 tablespoons mild salsa
  • 2 tablespoons cornmeal or gluten-free, casein-free breadcrumbs
  • 1 tablespoon canola oil
  1. Drain and rinse black beans.

  2. Mash beans with a potato masher or fork.

  3. Combine with salsa and breadcrumbs.

  4. Form into small cakes.

  5. In a medium skillet, heat oil over medium-high heat.

  6. Cook cakes on each side.

MAKES 6 CAKES

Change Things Up!

Changing side dishes can completely change the tone of a meal. If you serve black bean cakes with a side of rice and avocado one day, try serving them for breakfast with fried or scrambled eggs the next time. Once you find something that your child likes, you can expand on that by serving the favored dish with different foods.
