Roasted Potato Rounds
Baking potatoes or Yukon Gold potatoes can be substituted for red potatoes.
INGREDIENTS
- 3 large red potatoes
- 2 tablespoons olive oil
- Sprinkling of sea salt
Preheat oven to 475ºF.
Wash and thinly slice potatoes.
Spread 1 tablespoon olive oil on baking sheet.
Spread potato slices on top of oil.
Top with remaining oil and salt.
Bake 13–15 minutes, until soft and golden.

Acceptable “Junk” Food
It is not unusual for some children with autism to be extremely limited in their food choices. What if fries and other not-so-healthy choices are among the very few options that your child will eat? Try to offer a healthier version of the favored food. For example, roasted potato rounds (or cut into fry shapes) can provide a healthy alternative to French fries. If your child won't try them when first served, try again in the future.
