Mashed "Sweet" Potatoes
If part of your sweet potato is bad, you cannot just remove the bad part and use the rest of the potato. If part of it is bad, you have to get rid of the whole potato!
INGREDIENTS
- 4 sweet potatoes, peeled
- ¼ cup gluten-free, casein-free margarine
- ¼ cup honey
- ¼ cup light agave nectar
- ½ cup gluten-free, casein-free soy milk
Peel potatoes and cube them.
Bring pot of water to a boil. Place potatoes in boiling water and boil for about 20 minutes.
Drain potatoes and place in mixing bowl.
Add margarine, honey, and light agave nectar, mix well.
Add soy milk to reach desired texture.
YIELDS 4 CUPS (8 SERVINGS)

“Milk” Versus “Drink”
Most commercially available cows' milk substitutes use the word “milk” in their names, although they are not the milk produced by a lactating animal. Some people prefer to call such a beverage a “drink” as opposed to “milk” to avoid confusing the child who knows she cannot drink cows' milk. Whatever you call your milk alternative of choice, make sure that your child knows the difference between what's okay to drink and cows' milk, which is not okay on a casein-free diet.
