Cauliflower and Potato Mash

Here is a twist on mashed potatoes! Add other items to these “mashed potatoes” based on your child's taste. Try adding peas to this mash for a little more texture.

INGREDIENTS

  • 2 large potatoes, chopped
  • 1 head of cauliflower, cut into florets
  • 1 cup gluten-free, casein-free soy milk
  • 1 tablespoon gluten-free, casein-free margarine
  1. Place potatoes in a medium pot and cover with water. Boil the potatoes for 10 minutes until soft, drain, and return to pot.

  2. Steam the cauliflower until tender, drain, and add to pot with potatoes.

  3. Add soy milk and margarine to potatoes and cauliflower.

  4. Mash with a potato masher or use a beater to get a thinner puree.

YIELDS 5 CUPS

Are There Different Colors of Cauliflower?

Yes, there are! There is a purple cauliflower that contains the antioxidant anthocyanin, which is also in red wine and cabbage. There is green cauliflower, which is called broccoflower. And there is orange cauliflower, which contains 25 times more vitamin A than white cauliflower … it competes well with carrots!
