Cucumber Tomato Salad

This versatile salad can act as dip for corn chips, or it can be used as a topping for fish or chicken.

INGREDIENTS

  • 4 hothouse tomatoes
  • 1 cucumber
  • ½ red onion
  • 1 tablespoon minced garlic
  • 2 tablespoons extra-virgin olive oil
  • 3 tablespoons gluten-free, casein-free red wine vinegar
  • Salt and pepper to taste
  1. Dice tomatoes, cucumber, and onions.

  2. In large mixing bowl, combine all ingredients.

  3. Salt and pepper to taste.

Picking an Olive Oil Is Confusing!

There are four descriptors that show the degree of processing in the olive oil. Extra-virgin olive oil means that this is the oil from the first pressing of the olives. Virgin olive oil is from the second pressing. Pure olive oil is then refined and filtered slightly. Extra-light oil has been highly refined and retains only a mild olive flavor.
