Zucchini Yacht

This recipe makes a great dish for a group. Serve this with Eggy Boats and Caribbean Dream Boats and have a boat parade for your children!

INGREDIENTS

  • 1 zucchini
  • 1 summer yellow squash, chopped
  • ¼ red onion, chopped
  • 1 ripe mango
  • ½ cup finely chopped cilantro
  • 2 tablespoons gluten-free, casein-free red wine vinegar
  • 1 tablespoon olive oil
  1. Slice zucchini lengthwise forming 2 long boats.

  2. Scrape out shallow middle of the zucchini to form the hull of the boat.

  3. Combine yellow squash, onion, mango, and cilantro and mix with red wine vinegar, and olive oil until coated thoroughly.

  4. Fill the zucchini boats with this filling.

  5. Serve on a slice of romaine lettuce for the “water.”

Zucchini Vessels

Hollowed-out zucchinis make great vessels to hold different foods. Fill the zucchini with egg salad, chicken salad, or a fruit salad. Nutritionally, your children will get small amounts of folate, potassium, vitamin A, and manganese when eating zucchini.
