- 1 zucchini
- 1 summer yellow squash, chopped
- ¼ red onion, chopped
- 1 ripe mango
- ½ cup finely chopped cilantro
- 2 tablespoons gluten-free, casein-free red wine vinegar
- 1 tablespoon olive oil
Slice zucchini lengthwise forming 2 long boats.
Scrape out shallow middle of the zucchini to form the hull of the boat.
Combine yellow squash, onion, mango, and cilantro and mix with red wine vinegar, and olive oil until coated thoroughly.
Fill the zucchini boats with this filling.
Serve on a slice of romaine lettuce for the “water.”
