Veggie Roll-Up

This wrap-style sandwich combines textures in a really appealing way.

INGREDIENTS

  • 2 corn tortillas
  • 4 tablespoons Tofu Avocado Spread
  • 2 tablespoons chopped tomato
  • 2 tablespoons minced red pepper
  • 2 tablespoons chopped cucumber
  1. Spread Tofu Avocado Spread across surface of the tortilla.

  2. Sprinkle on vegetables.

  3. Tightly roll tortilla into a tube.

  4. Cut the tube in half.

YIELDS 2 TORTILLAS
