Veggie Roll-Up
This wrap-style sandwich combines textures in a really appealing way.
INGREDIENTS
- 2 corn tortillas
- 4 tablespoons Tofu Avocado Spread
- 2 tablespoons chopped tomato
- 2 tablespoons minced red pepper
- 2 tablespoons chopped cucumber
Spread Tofu Avocado Spread across surface of the tortilla.
Sprinkle on vegetables.
Tightly roll tortilla into a tube.
Cut the tube in half.
