Eggy Boats
One simple way to make the butternut squash puree is to use jarred baby food as a substitute. Baby food purees can be a healthy addition to your kitchen long after your children have outgrown baby food!
INGREDIENTS
- 25 snow pea pods
- 6 hard-boiled eggs
- ¼ cup gluten-free, casein-free light mayonnaise
- 2 tablespoons butternut squash puree
- ½ cup olive slices
- Salt and pepper to taste
Wash pea pods and dry thoroughly.
Slice the top of the pea pod (the straight side) open so you make “pea pod boats.”
Mash hard-boiled eggs and mix together with the light mayonnaise and butternut squash with a fork.
Add salt and pepper to taste.
Spoon 1 tablespoon into each pea pod and top with olive slices as “lifesavers.”
Cover, chill, and serve.
