Eggy Boats

One simple way to make the butternut squash puree is to use jarred baby food as a substitute. Baby food purees can be a healthy addition to your kitchen long after your children have outgrown baby food!


  • 25 snow pea pods
  • 6 hard-boiled eggs
  • ¼ cup gluten-free, casein-free light mayonnaise
  • 2 tablespoons butternut squash puree
  • ½ cup olive slices
  • Salt and pepper to taste
  1. Wash pea pods and dry thoroughly.

  2. Slice the top of the pea pod (the straight side) open so you make “pea pod boats.”

  3. Mash hard-boiled eggs and mix together with the light mayonnaise and butternut squash with a fork.

  4. Add salt and pepper to taste.

  5. Spoon 1 tablespoon into each pea pod and top with olive slices as “lifesavers.”

  6. Cover, chill, and serve.
